Recipe:

Step 1: Jasmine Rice Arancini with Jocoque and Jerusalem Artichoke Chips
Ingredients
* 1 ½ cup water
* 1 jar jocoque
* 4 chile japoneses, soaked in hot water for 15 minutes
* 1 cup washed jasmine rice
* 1 packet jerky
* 1 ½ cups Jarlsberg cheese, cubed
* ¼ cup sliced jamon iberico
* 3 jerusalem artichokes, peeled
* Salt

1) Blend the chiles.
2) Soak jerky in water. Remove jerky.
3) Combine chiles to the water and add to a pot.
4) Add rice and salt. Cook together.
5) Cook like a risotto.
6) Add the jocoque.
7) Render the jamon iberico. Add to the rice.
8) Make balls out of the rice.
9) Add a jarlsberg cheese cube to the center.
10) Deep fry.
11) Remove from the deep fryer.
12) Slice the Jerusalem artichokes on a mandolin.
13) Fry

* Blender
* Medium pot
* Silicone spatula
* Small pan
* Ice cream scoop
* Deep fryer
* Spider
* Sheet pan with rack
* Mandolin
* Cutting board

Step 2: Jackfruit Beef Jerky Gastrique
Ingredients
* 1 cup jackfruit
* 1 teaspoon salt
* ¼ teaspoon pepper
* ⅔ cup water
* ¾ cup jerky, chopped fine
* 2 tablespoons apricot jelly
* 1 teaspoon jagermeister

1) Add all the ingredients to a pot and simmer until softened.
2) Blend and pass through a fine mesh strainer.
3) Put in a squeeze bottle.

* Medium pot
* Wooden spoon
* Blender
* Fine mesh strainer
* Bowl
* Squeeze bottle

Step 3: Jicama Jalapeno Relish with Jaggery and Lime Jello
Ingredients
* 1 jicama, peeled
* 1 jalapeno
* Salt
* 1 jaggery disc
* 1 box lime jello
* 2 teaspoons water

1) Finely dice the jicama and jalapeno.
2) Salt both veggies and massage.
3) Add lime jello and a few scrapes of jaggery.
4) Add water and let sit until the flavors come together.

* Cutting board
* Knife
* Medium bowl
* Spoon

Step 4: Assemble!
Ingredients
* 3 arancini balls
* 1 bottle of gastrique
* 1 bowl of relish
* 1 plate jerusalem artichoke chips

1) Plate away!
